The base of this recipe is vegetarian. I cook the beets separately and then add in the other ingredients. This is a hearty winter soup. This was the perfect sweet treat for a busy day. We buy the local blueberries in season and freeze them. Butter is at room temperature. Use the blueberries frozen. Amazingly, this recipe has no eggs.
