There are different ways to create pasta or noodles out of summer squash. I used a vegetable spiralizer purchased from Pampered Chef. The small amount of olive oil and fresh garlic cloves transforms your summer squash into a wholesome delight. I served mine with a meat sauce, like what I make for spaghetti. The beautiful yellow summer squash we received as a gift was from Anita Mesman’s garden.
Ingredients
Summer squash, 3 small/medium
Butter, 1 tablespoon
Garlic cloves, 2
Salt and pepper
Preparation
Spiralize the summer squash. Melt butter in a large skillet, over medium heat. Add the garlic cloves, cook, stirring frequently. They will become fragrant. This takes about a minute.Stir the squash pastainto the garlic/butter mixture. Gently lift the squash pasta around. Cook up to 10 minutes, until tender. Season with salt and pepper. Add your favorite topping.
