Baked Salmon

A Sunday evening meal that includes salmon is always enjoyable. I recently paired it with steamed brown rice and asparagus cooked in olive oil with fresh garlic. Kevin’s favorite part is the tail. After it is cooked, I cut it into serving size portions, with one lemon slice on each serving. We save one piece to crumble up for our Miniature Australian Shepherd, Chili. She loves salmon.

Ingredients

Salmon, one side

Olive oil, 2 tsp

Butter, 1 tbsp

Lemon, ½ sliced thin

Seasoning of choice

Tin foil

Preparation

Prepare a baking sheet with tin foil. Wash and pat dry the salmon side. Lay skin side down. Drizzle the olive oil along the length of the salmon Slice the lemon thin and lay along the length of the salmon. Cut the butter and tuck it between the lemon slices. For seasoning I have used black pepper or parsley. Bake in a preheated 350 F oven for 30 minutes. The oil from the salmon will congeal on the top, visibly white. We look for this white coating and it will be done to your liking.
