Yes, it's possible to stretch your food budget and meal planning to include salmon in several dishes. This recipe creates enough hash for one serving, for one person. It also allows you to use up those potatoes leftover from a recent meal. That is another budget-stretching feature of this recipe. When preparing to add salmon to a recipe, it must be carefully separated, with your fingers, to look for and remove bones. Have you ever gotten a fish bone stuck in your throat? Ack! It's awful. I learned a home remedy to dislodge it. Get a piece of bread and pull off a piece and squish it together. Chew and swallow. The bread will push and dislodge the fish bone. The disclaimer I will add is to consult with your medical provider. You could use canned salmon and if so, the bones are safe and healthy to eat.
Ingredients
Cold boiled potatoes, 2 medium
Onion, 3 slices of medium
Olive oil, 1 tbsp
Salmon, previously baked or smoked, 1/8 cup to ¼ cup
Salt and pepper, to taste
Dried parsley, a few shakes
Preparation
Add the oil to the pan. Chop the onion and add to the pan. Keep the temperature at medium low heat. Cut the potatoes into bite size pieces and add to the pan. Use a spatula to mix and stir. Sprinkle the parsley. After two minutes, the potatoes and onion will start to brown. Crumble the salmon, in a bowl, to look for and remove bones. Spread the fish over the potatoes and onion. Again, use the spatula to mix and turn over. Heat just until the salmon is warm. The salmon will retain its moisture.
