Lime-Marinated Halibut
Lime-marinated halibut goes under the broiler. You can substitute cod for the halibut. You can marinate for up to 3 hours.
Thank you for the recent wonderful compliments, when I was out and about. I was called the "recipe lady." Another said she loves my recipes, making most of them! Another receives a gift subscription at their home in Bothell. He recently cooked one of my recipes and loves how easy they are to prepare. Thanks everyone!
Ingredients
Halibut fillets, 2, 1 inch thick
Limes, 2, to squeeze the juice
Water, 1/3 cup, optional
Honey, 1 tablespoon
Olive oil, 1 teaspoon
Dried dill, 1 teaspoon
Oil spray
Preparation
Rinse and pat dry the halibut. In a small bowl, whisk together the lime juice, honey, olive oil and dill. Use the same bowl to put the halibut in or use a slightly bigger bowl. Place the halibut in the marinade and spoon over several times. Cover and refrigerate for 1 to 3 hours. Turn halibut over a few times, spooning over marinade.
Prepare your grilling pan. Line a small baking sheet with tin foil. Use a baking sheet with edges. Spray the foil with oil. My halibut had skin, so I laid skin side up. Broil on high for 5 minutes. Remove from oven and turn over the halibut. Spoon over the marinade. Broil an additional 4 minutes. Test for doneness. Should not be glistening or jellylike when you flake the fish.
