I was recently in Maui, Hawaii for a family vacation. Banana bread is a favored snack and available at roadside fruit stands, in the grocers and at dinner meals hosted by friends. I proudly shared that I have five banana bread recipes. This is one of my family favorites. This recipe was first published in 2019.
Ingredients
Ripe bananas, 3 large
Butter, 1/3 cup melted
Brown sugar, ¾ cup
Salt, ½ teaspoon
Egg, 1 large
Vanilla, 1 teaspoon
Flour, 1 and ¼ cups
Cocoa Powder, unsweetened, ¼ cup
Baking soda, 1 teaspoon
Allspice, ¼ teaspoon
Chocolate chips, semi-sweet, ½ cup
Preparation
Preheat oven to 350 degrees. Butter or spray oil in a 9 x 5 bread loaf pan. Mash or purée the bananas in a large mixing bowl. Melt the butter and stir into the bananas. When measuring the brown sugar, pack it. Stir in the brown sugar and salt. Use a wire whisk to smooth the mixture. Beat the egg before adding. Add the vanilla and keep mixing with the whisk. In a separate bowl, using a second wire whisk, mix the flour, cocoa, baking soda and allspice until well blended. Add the flour mixture to the banana mixture. Use a wooden spoon to mix but not overly mix. Stir in the chocolate chips. Pour batter into bread pan and bake one hour. Cool ten minutes before removing from pan. Cool completely on a wire rack before cutting.
