Halibut Potato Patties. This recipe was a matter of deduction. I make potato patties with leftover mashed potatoes. I make salmon patties with cooked salmon. With just enough leftover cooked halibut, I decided to combine two ingredients we both love to eat. Add flavor with fresh green onion. The result was optimal. This uses leftover potatoes and halibut.
Ingredients
Boiled potatoes, 3 medium or large
Cooked halibut, 1 cup
Egg, 1
Green onions, 3 chopped
Olive oil, 2 tablespoons
Butter, 1 tablespoon
Preparation
Cut and break apart the potatoes. Place in a large bowl. Remove bones from halibut and crumble with your fingers. Add to potatoes. Add egg and green onions. Stir with a fork.
When well blended, form into patties, about the size of your palm, or 3 inches across.
Add oil and butter to frying pan. Begin heating the pan and as it heats up, put the patties into the plan. Cook on medium low. You must cook thoroughly for the egg to be done inside. They will be slightly crispy and brown on both sides. Cook 4 minutes each side. Serve warm.
