We love the fresh strawberries that grow in our area. We buy berries in bulk as soon as the fruit stands open. This recipe helps them stay fresh a bit longer. The vinegar leaves no flavor.
Ingredients
Fresh strawberries, half flat
Water, 2 to 3 gallons
White vinegar, 1 cup
Preparation
Carefully set strawberries into a very large bowl. Fill with water. Add vinegar. Swirl berries by hand. Let it sit a minute or so, then swirl again. By hand, scoop berries into a clean bowl, then into airtight container, such as a snap lid or quart-size ziplock bag. Stores in refrigerator for up to one week. When ready to use, cut off stem end.
