Salisbury steak

This is a take on my mother's recipe, who made them with moose burger. I use a very lean hamburger. After handling raw meat, I wash my hands thoroughly. Prepare all vegetables before handling meat.

Ingredients

Hamburger, 1 lb.

Onion, 1/2 C finely chopped

Green bell pepper, 1/4 C finely chopped

Garlic, 1 T finely chopped

Parsley flakes, 1 T dried

Worcestershire sauce, 1 T

Prepared yellow mustard, 1 T

Egg, 1, slightly scrambled

Salt and pepper, 1 tsp each

Seasoned bread crumbs, 1-1/2 cups

Flour, 2 T

Butter, 1/4 C

Onions, 2 or 3 large

Olive oil, 3 T

Beef broth, 2 C

Preparation

When handling raw meat, use a glass or metal bowl. Add chopped onion, green pepper, garlic, Worcestershire sauce, mustard, salt and pepper and bread crumbs. Mix together, then add hamburger and egg. Mix by hand and begin forming six flat oval patties. Heat 2 tablespoons olive oil in large skillet, then reduce heat to medium-low and place each Salisbury steak into pan. Brown each side. Add oil if needed.

In another pan, melt butter. Slice onions, separate into rings, add to pan, saute until lightly or golden brown. Remove from heat. Place browned steaks on platter.

In steak skillet, slowly add flour and mix with wire whisk. Slowly add beef broth and continue whisking until smooth and a mellow color forms. Reduce heat to low. Place steaks in skillet surrounded by onion rings. Simmer for 20 minutes. Remove steaks with metal spatula. Serve with boiled potatoes.
