This is the perfect side dish. Aqiimuk's Kitchen has published several eggplant recipes since 2013. This recipe is simple and turns out tasty.
Ingredients
Eggplant, 1 medium
Flour, 1 C
Salt, 1/8 t
Pepper, a few shakes
Olive oil, 4 T
Preparation
Cut and remove stem end. Cut eggplant into four slices lengthwise. Leave skin on. Place on plate and salt. Set for 30 minutes. Pat dry, turn over and salt again. Set for 20 minutes. Pat dry. Heat oil in large skillet over medium-low heat. Put flour in shallow dish big enough to hold eggplant slices. Cover all sides with flour, then place in skillet. Sprinkle with salt and pepper. Brown each side. The end result is a soft tasty slice of eggplant. Eating the skin is optional.
