Roast Chicken

I wanted a whole roasted chicken that I could use in a few recipes. Usually, I do a slow roast. Depending on the size of the chicken, roasting time is 70 to 90 minutes. The chicken I roasted was around 4 pounds. I checked it for color and used a meat thermometer to see that it reached an internal temperature of 165 degrees F. It was done in 60 minutes.

Ingredients

Whole chicken

Olive oil, 1 tablespoon

Salt and pepper, to taste

Preparation

Place rack in lower third of oven. Preheat oven to 425 degrees F. Rinse chicken and pat dry. Place chicken in cast iron frying pan, breast side up. Tie legs together. Rub oil over entire chicken. Season with salt and pepper. Roast 60 to 90 minutes, to an internal temperature of 165 degrees F. The skin will be crisp and brown.
